Greek Style Lemon Roasted Chicken

need some tasty sides to go with this add the recipe too if you don't mind whether it's yours or not

  • This is the way they made it at a Greek restaurant where my husband worked. It's very simple, but really delicious
    Grecian Chicken
    4-6 Chicken pieces, bone-in
    3-4 Potatoes, peeled and cut into 2” pieces
    1 onion, sliced
    ½ stick butter, melted, or 3-4 Tablespoons olive oil
    1 Tablespoon lemon juice
    ½ teaspoon oregano
    Parsley, chopped
    Put chicken, potatoes and onions in baking pan.
    Sprinkle with lemon juice, salt, and oregano. Pour
    melted butter or olive oil over all. Bake at 350 for about an hour.
    Sprinkle with fresh parsley if desired.
    I would serve it with a salad and green beans.

  • Parsley potatoes (boil some redskin potatoes, when done coat in butter or olive oil and chopped fresh parsley) and green beans (blanch the beans in some salted water for a minute, let dry. Cook some garlic in a pan with olive oil, toss the beans in for a minute then zest on a lemon and add some salt).

  • Baked Asparagus- place the asparagus in a baking dish, pepper, sprinkle with Olive Oil, then sprinkle that with Parmesan Cheese.

  • Rice pilaf made with chicken stock at the very end put some spinach in it. greek salad would begood, so would green beans cooked with tomato and cinnimon. Rosemary roasted potatos, Greek salald. I make up recipes as I hgo along- Ifany of this intests you I can write something down for you.
