How can I conserve potatoes over night?

I cut them into small pieces for my recipe, but I won´t need them until the next day, how can I conserve them so they will not go bad=?

  • Put them in a bowl of cold water, and stick it in the fridge.

  • put them in cold water and refrigerate. as musicmom said restaurants do it all the time. i can vouch for that as i am a cook for a restaurant and we do this. make sure the water is cold cold. and cover if possible then refrigerate. the standard fridge life for potatoes like this is about 24 hour. now u could prolly go longer but restaurants are not aloud to even if they still a peer to be ok after that time frame we are required by health code to toss them.
