What is your vegetarian/vegan christmas dinner menu?

  • Yum, ohwrite! We're coming to your place for the hummus alone. Be warned, my oldest is a hummus snob.

    We don't celebrate Christmas but we try to do something special for ourselves. This year I've invited a dear friend and her DH over. I think we'll have a crust-less quiche that I like to make, I like to add spinach, onions, soy "meat". Some sauteed butternut squash with onions, cinnamon and raisins, and something for dessert, but i haven't thought of that one yet.

  • I am not a vegetarian, but used to eat primarily vegetarian....would like to again, but my guys always mutiny on me. Anyway, we don't do a traditional sit down dinner on Christmas, we make all of our favorite appetizers and finger foods, and put them out through out the day as friends and family drop by, or as we get hungry. Here is a sample of the vegetarian dishes that I like to serve:

    Hummus with a mushroom topping/ pita chips or akmak crackers (vegan)
    babaganoush with pita bread or akmak crackers (vegan)
    Stuffed mushrooms (mine are stuffed with feta cheese and spinach (vegetarian)
    artichoke/spinach dip in a bread bowl
    mini burritos with guacamole and salsa
    Veggie platter
    Fruit platter with a yogurt dip

    For a sit down meal I might serve spinach and a veggie platter with carrots, celery and peppercini, mushroom lasagna, salad, minestrone, and garlic bread, with a nice dessert.
