  • I use
    ! stalk celery
    1 large onion
    1/4 c. oil
    sweat these until clear/ translucent.
between 1-3 teaspoons each. I do this by taste
3 c. veggie broth or chicken
8 cups potato cubes toatsted in the oven. (POTATO Bread is sweeter)
1 small can of water chestnuts chopped into pieces larger than a pea
1/2 cup dried apricots cut into chunks.

Throw all this stuff into a big bowl add the veggie / chicken broth until moistened.
You can add more or less broth until the consistency is as you like it.

    Cover with foil

Bake in the oven for 1/2- hr to 45 min. Depending on how full your oven is.

To this recipe you can add
Mushrooms, or cooked baby carrots cut into pieces. This is our veggie recipe b/c my daughters do not eat meat or meat by products. You can add any thing you like or remov

  • Miso Dressing

    1) 2 Tbsp rice wine vinegar
    2) 1 Tbsp miso of choice
    3) 1/2 Tbsp tamari-regular or wheat free
    4) 1 tsp dark sesame oil
    5) 3/4 tsp grated fresh ginger
    6) red chili to taste
    7) 1/4 cup light sesame oil

Mix 1~6 in a bowl and after homogenised slowly add sesame oil to thicken the dressing.

Variation: omit miso, increase ginger add 2 cloves-or to taste-grated garlic and sprinkle toasted sesame seeds.
Also, some drops of lemon/lime juice if you feel it is too oily.
