Just got my pumpkin cheesecake with Sour Cream topping out of the oven. I know that it has to cool, then I know that I need to refrigerate it to let it completely cool and set. My question is do I wait to take it out of the spring form pan until it's completely cooled? I think this is right, but I can't find my original recipe and the online versions tell me the BAKE time, not the COOLING time. Please help! I don't want to un-spring it and have it turn to soup....
