  • Dice the turkey and put in a pan with a little onion, olive oil and some chopped garlic. Saute in pan stir constantly until onions are softish. Add some soy or Worcester sauce and keep stiring. Add either leftover corn pieces, diced cooked carrots or cranberries (not the jellied, but the berries). Add a little pepper. Serve warm on plain white rice.

Dice the ham and mix with onions and diced potatoes (or sunchokes) and saute in a pan with some olive oil and garlic.

  • In Ky we have an open faced sandwich called the Hot Brown. You put turkey on a piece of bread, cover with a cheese sauce then some bacon and a tomato. Then you broil it until it's browned (just a few min). OMG, them's good eats!

  • Dice it up with potato and make hash, then serve that with eggs for breakfast, shred it and use it to make salad like you would chicken or ham salad, top baked potatoes along with cheese/sour cream/ etc, omelets, frittatas and quesadillas (or any of the ideas idaspida listed)
