I need a few dinner ideas? Tight budget so nothing fancy please.

I have tons of pasta and rice. Lots of chicken. But I have no new meal ideas. Anything ideas for me?

  • Do you have any Cream of Mushroom soup? Cook the chicken, add 1 or 2 cans (depending on how much sauce you want) of the Cream of mush, fill each can 3/4 full of milk and stir in to chicken. Dump chicken mixture over rice or noodles. Easy and yummy. We always add extra mushrooms as well.

  • Raspberry-Balsamic Chicken
    Source: Cooking Light

    1 teaspoon vegetable oil
    1/2 cup chopped red onion
    1 1/2 teaspoons minced fresh or 1/2 teaspoon dried thyme
    1/2 teaspoon salt, divided 4 (4-ounce) skinned, boned chicken breast halves
    1/3 cup seedless raspberry preserves
    2 tablespoons balsamic vinegar
    1/4 teaspoon black pepper

    Heat oil in a large nonstick skillet over medium-high heat until hot. Add onion; saut� 5 minutes. Sprinkle thyme and 1/4 teaspoon salt over chicken. Add chicken to pan; saut� 6 minutes on each side or until done. Remove chicken from pan; keep warm. Reduce heat to medium.

    Add 1/4 teaspoon salt, preserves, vinegar, and pepper to pan, stirring constantly until preserves melt. Spoon sauce over chicken, and serve immediately.

  • Some of these are easier and cost less than others, but if you have a few other basics on hand you should be able to use some of them.

  • You have chicken and rice, so chicken stir fry. You will just need some veggies to go on top.

  • This is one of my family's favorites! If you have a sandwich maker believe it or not the leftovers make great pocket sandwiches, and a small amount of leftovers goes further that way!!!

    Chicken Divan- simple and delicious

    1 whole cooked chicken- boned
    12 oz. frozen broccoli florets or chopped broccoli (defrosted and drained)
    2 small cans or 1 large can of cream of mushroom or cream of chicken soup
    1 cup sour cream
    shredded cheddar cheese (about 1 cup)
    2 slices of bread buttered and lightly broiled

    Preheat oven to 350 degrees. Arrange chicken in the bottom of a 9 x13 baking dish. Arrange broccoli over the top. Mix soup and sour cream, spread over broccoli, tear up broiled bread, and arrange over the soup mixture. Sprinkle with shredded cheese . Bake at 350 degrees for 35-45min. Serve over cooked rice or pasta.

  • OH, and if you do it in the crock pot (chicken, cream of mush and milk only) it comes out fork tender.
