  • Dirty rice with hamburger, pan fried corn (corn in butter in a frying pan makes it crispy) and carrots, red peppers, yellow carrots, and green beans in a olive oil and herb sauce.

  • we ended up having spaghetti. I was considering having an appetizer night, but that will be tomorrow night. On Thursday we will be having taco chicken. You shake chicken breasts in a plastic bag with taco seasoning bake at 350 for 40-45 min then top with a spoonful of salsa. bake 15 more min top with sour cream...YUM!!!!!!!!!

  • Unfortunately, we had hospital cafeteria food for dinner tonight. I had a hamburger with Mac & cheese & S/O had penne pasta & carrot cake but I don't care! S/O's 7 year old son came through his surgery with flying colors today & he's out of the danger zone & well onto his way to a speedy recovery! Woo hoo!
