intermediate moms who make fancy cupcakes, i have questions

what kind of frosting is this?

i dont want to buy cheap stuff and slap the icing on top. i want fancy decorations,. i was watching cupcake wars or something like that last nite on food network and i love how the pipe the icing on top. i dont know if thats buttercream or cream cheese. can someone help thanks

  • I think its butter cream, but it could also be creamcheese. Both have to be kept cold though or else they start melting.

  • Looks like butter cream. Cream cheese is more smooth and dense.

  • I would assume they are using butter-cream, normally you can do really good piping, and make beautiful flowers with butter-cream. Also I have never had a problem with the icing melting or the shapes of the flowers melting because they were not refrigerated. I worked at a grocery store and was the cake decorator, and we left our icing out, it was not refrigerated, in fact I think if it was it would be to hard to use and handle. Refrigeration does help them last longer, but you shouldn't have any problem with the icing melting.

  • Looks like a whipped buttercream, with maybe just a bit of luster dust or something mixed in along with the color.
