  • Meatloaf goes far, and isn't too expensive. I get the packages of Alfredo noodles, add canned chicken and broccoli and it is a cheap, semi-nutritious meal. Macaroni and cheese, add tuna, peas, mushroom soup-- cheap, easy tuna casserole. Skillet hash-- smoked sausage, potatoes, eggs, cheese (serve with salad or fruit). Beef stroganoff-- egg noodles, canned beef, cream cheese, mushrooms, mushroom soup (serve with a frozen veggie). Also, if you have an Aldi near your home, I highly recommend! We shop there as much as possible. For the most part, they have good prices for quality food.

  • I am making a Quiche -- super cheap ... eggs in a crust! some grated cheese and veggies. plenty of protein. I will probably make some soup, black bean chili, DH will make stir fry. That's as far as we have gotten.
