  • bar cookies yes...but not like your typical circle cookies. The flour and rising agents are all wrong for that.

I can't find the recipe I used to use. You could use any flavor of cake mix. Try this link, it has many different kinds. I am still looking for my recipe.

  • Here's one from Heloise:
    24 cookies

1 (18 ounce) box cake mix, unprepared (any flavor)
    1/2 cup vegetable oil
    2 large eggs
1Mix all ingredients well to remove lumps.
2Stir in raisins and/or nuts and/or chocolate chips if you so desire.
3Drop by teaspoonfuls on an ungreased baking sheet about 2-inches apart.
    4Bake at 350°F for 8-10 minutes.

  • Generally speaking, use butter in place of oil, and reduce the liquid.

One recipe I liked was making cookies from brownie mix. I love chewy cookies, so these are just about perfect to me.

1 - box of fudge brownie mix (19.8 oz)
    1 cup flour
    1 lg egg
    1/2 cup water
    1/4 vegetable oil
    1 cup semisweet chocolate chips
    3/4 cup confectioners sugar
1/2 chopped toasted pecans or almonds (optional)

Combine everything but the confectioner's sugar. Chill for 20-30 min then scoop with a 1 1/2 tsp cookie scoop. Drop rounds into powdered sugar and roll. Bake at 350*f for 8-10 minutes or until set. Cool on a wire rack. SO yummy!
