questions about asian orange chicken and fresh ginger root?

So here's the ingredients to the sauce:

1 1/2 cups water
2 tablespoons orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
1/2 teaspoon minced fresh ginger root
1/2 teaspoon minced garlic
2 tablespoons chopped green onion
1/4 teaspoon red pepper flakes


1) Do i use the orange juice from the juice of an orange? last time i tried frozen canned juice and it turned out horrible.

2)where do i find a fresh ginger root? oviously in a grocery store but what section?

3)how to use a fresh ginger root? (obviously my first time) do i peel it and grate it like a garlic clove?

  • fresh ginger is usually by the garlic, you scrape it with the back of a knife (the dull side) and then grate it with a microplane. I use orange juice concentrate for my sauce, but it's a completely different recipe. Try the fresh juice and see how it is. It will be a less potent orange flavor than with the concentrate.

  • Orange zest-scrape the orange peel but it will be bitter so add sugar or use it along with orange juice.
    Ginger-peel, slice and mince
    Your recipe sounds good.
