growing up, we were not rich by any means. One thing my mom did was she could turn an average size chicken into 5 meals for 5 people, just adding a side dish to each. We would have chicken one night for dinner with mashed potatos, then it was chicken enchaladas the next night, then it was chicken with mac and cheese the next night, then the next night she would make chicken soup for dinner and we would finish it the next day for lunch. Also, with that same chicken, she would usually make a couple chicken sandwiches for my dad to take to work.
