Low Sodium Meals?

I have a good friend of mine who recently had a pretty bad fall. It resulted in a broken leg that needed surgically repaired, and she'll be bed ridden for a good month at least. Some friends and I are trying to give her meals, but she's on a very strict sodium diet. She can only have 500mg of sodium per day, so she can't even have things like lunch meats or croutons in a salad. We need some ideas to keep her fed without making her sick, or bored of her food. Anyone have any ideas? Oh, and she's a single woman, no children.

  • Flavor with herbs instead of salt. Roasted Chicken breast with garlic mashed potatoes

  • Cumin. It will add lots of flavor to almost anything and no salt needed to "bring it out"

  • Use single item foods. No casseroles. There are many salt free spices that can be used.

  • Cook from scratch; leave out the salt. There are many wonderful flavors you can use, like fresh ginger and garlic, cumin, cayenne, etc.

  • Yes, I agree with rkoloms. I marinate chicken in fresh squeezed lime juice, garlic and fresh cilantro and then grill it on my George Foreman.....practically no sodium. Roast vegetables with a tiny bit of extra virgin olive oil and rosemary and garlic or whatever spices she likes.  We don't have any health issues, but we cook low sodium anyway. These websites can help you find healthy low sodium meals.
