Seeking low-carb dinners that don't cost a lot!

I am a pre-diabetic and am seeking healthier choices for not only myself, but my family. I was told to cut down on my carbs. We are on a budget though.

Anyone have any good ideas on a low carb kid-friendly dinner that doesn't cost a lot? or a website that could give me some good ideas....

  • Well, I'd say start with lots of legumes and lentils and whole proteins. Quinoa is a whole protein that is used like a grain (substituted for rice) that would be easy on the budget. Lentils are awesome for you and so versatile! Black beans, would be an excellent resource for you too.

  • Beans are a good source of protein and are a lot less expensive than meat.

  • you can google low carb recipes and get so many links, there are a lot of good blogs out there, some of the best ideas and support.
