Friends coming for a luncheon, what should I serve?

Having 4 friends for lunch, what would be healthy, easy and taste good? Thanks for the ideas.

  • I'd get HUGE over sized uber fluffy baked potatoes and crust the skins w/ olive oil and sea salt. I'd set up a topping bar of chili, steamed broccoli, light sour cream, crumbled turkey bacon, etc etc etc

  • I like to do a quiche and roasted red pepper tomato soup + fruit salad, or quiche and a nice salad with grilled chicken. Also some fresh rolls.

  • Something you can make ahead, so it is ready to serve when it is time to eat. It sucks to be in the kitchen while everyone else is visiting.

  • Something like this you could make ahead of time. Then add a tray of carrots; celery; baby tomatoes; and cube cheeses.
