  • Caponata (eggplant and olive antipasto) served on pumpernickel canape bread for starters. Broiled salmon steaks, served on mixed greens tossed with cracked pepper and balsamic vinegar, with a side of brown rice pilaf, curried yams with dried fruit and a glass of red wine. Apple tart with pecan crust served hot topped with slivered dark chocolate. Green tea to finish.

  • Ceviche made with shrimp and tilapia (vitamin c, iodine, protein, lycopene,) on a tostada made from a 100-calorie whole-grain tortilla lightly sprayed with olive oil and baked to a golden crisp.
    lean chicken in homemade mole sauce (dark chocolate has antioxidants, cinnamon regulates insulin production, chiles have vitamin C)
    red quinoa and black bean salad (essential amino acids, complex carbs, low-fat proteins, low GI), served warm in place of rice
    spinach salad with red onion, strawberries and feta cheese (vitamin C, iodine, calcium)

    And for dessert, a tropical fruit salad of mango, papaya, and pineapple, *LIGHTLY* drizzled with honey and accompanied with fresh mint.
