Looking for recipe for Biscuits and apple butter like Lucille's BBQ restaurant

  • Well biscuits are easy enough. I am not familiar with that restaurant, but biscuits generally break down into two categories...baking powder biscuits and buttermilk biscuits.
    Baking Powder Biscuits:
    2 cups flour
    ½ teas. salt
    2/3 cup milk
    6 Tblsp. lard. (or Crisco)
    4 teas, baking powder
    ¼ teas. baking soda

    Sift flour. Measure and sift again with other dry ingredients. Cut in lard. Add milk. Knead slightly to combine ingredients, then pat out about 1/2 in. thick on lightly floured surface. Cut into rounds about 2 to 2-1/2-inch wide with floured cutter or drinking glass. Bake at 450 degrees for 10 to 12 minutes.

    Buttermilk Biscuits:
    1/2 cup cold butter
    2 1/4 c self-rising soft-wheat flour
    1 1/4 c buttermilk
    2 tbsp melted butter

    Cut butter into flour with a pastry blender until crumbly and mixture resembles small peas. Cover and chill 10 minutes. Add buttermilk, stirring just until dry ingredients are moistened.
    Turn dough out onto a lightly floured surface; knead 3 or 4 times, gradually adding additional flour if needed. With floured hands, press or pat dough 3/4" thick. Sprinkle with flour, fold in thirds, then press into 3/4" thick rectangle again. Repeat, then press to 1/2" thick. Cut with cutter.
    Bake at 450*f for 13-17 minutes or until deep golden brown. Brush with melted butter.

  • As for the apple butter, you can purchase it, or make your own. You can peel, core, chop, and cook apples...or take the easy way and buy unsweetened applesauce (16 ounce jar). Put it into a thick bottomed pan, and add 1 cup brown sugar, 2 tbsp cinnamon, 1 tsp all spice, 1/2 tsp nutmeg, and 2 tbsp butter. You can also do this in a crock pot. What you want to do is combine everything really well, then cook on low heat for several hours until it thickens and gets quite a bit darker. Then, it's done! easy and delicious.

  • Well according to a Lucille's employee the recipe for their apple butter is quite simple although I do NOT have measurements.
    Unsalted butter
    Apple butter ( The kind for toast that is similar to applesauce. Lucille's uses the monarch brand with the lion on the label.)
    Corn Syrup

    Whip the unsalted butter and then add the apple butter. Then add the corn syrup.
