Italian Recipes Please!

My husband is from Bay Shore NY, and they love their Italian food. I have made things like; baked ziti, muffaletas, & ribollita, but I want to make something different. I know he is getting sick and tired of the same ole same ole. I need some recipes that are easy to make and very tasty... Emphasis on the EASY!!!

  • Crockpot Chicken Cacciatore
    4 -4 oz. chicken thighs or breasts
    1 onion, chopped
    3 garlic cloves
    3 cups sliced mushrooms
    One 14.5 oz. can of stewed tomatoes
    1 green bell pepper, chopped
    1/2 cup tomato juice
    1-2 tsp. oregano (or Italian dried seasoning)
    4 cups hot-cooked noodles.

    Combine all ingredients (except noodles) in crockpot and
    cook on HI for 4-6 hours. Serve over pasta noodles.

    My husband's Aunt Bianca, all 4'9", 98 lbs. of her, taught me to make it. Saute garlic in olive oil, remove and set aside garlic, add chicken pieces, brown on all sides, remove. Add green pepper, saute for a minute, add mushrooms, saute for a couple minutes more, then add tomato sauce, garlic and chicken. Add oregano. Simmer, covered until chicken is tender. Serve over pasta. I changed it for the crockpot, but it's good prepared either way. .
