RGGH Why do my hamburgers always fall apart!

I rarely make my own hamburgers because they always fall apart, usually I stick with frozen patties and thats it! Well I found some yummy burger recipes and tried a few, but they always fall apart either before they even get to the grill, or during the flip! What am I doing wrong?? Should I just freeze my patties?

  • 2 things. 1 make sure the meat is room temp when you make the patties. and 2 ill give you a secret use parmesaen cheese or bread crumbs and an egg to help them stay together and moist.

  • Oh and you don't have to go down to the 85/15 beef but the 97/3 is too lean. The egg trick works well also

  • If you are using super lean meat they will fall apart. Whole super lean meat is great in tacos casserole etc if you are grilling burgers the fat is necessary for that hold together melt on your mouth flavor

  • All of the above - plus yes, freeze your burgers. Not totally solid, necessarily, but putting them in to get frosty and firm up really helps! We've never had a burger fall apart unless I don't freeze them first.
