What foods does everyone eat that are quick, easy, and super healthy?

I am looking to eat healthier but need some ideas on things that are quick, easy, and not too expensive and overall really healthy.

  • I love quick, portable snacks too. String mozarella cheese (60 calories, high in protein), plain almonds with dried cranberries or raisins, peanut butter on a whole wheat tortilla (roll it up), cottage cheese with pineapple, whole wheat toast with sliced banana's on top, soy nuts, mixed nuts.

  • Morning - 2 hard boiled eggs...everyday. Keeps me full long & it's only a 140 calorie breakfast.

snack - fruit or salad, yogurt, maybe a 1/2 a GNC shake...

Lunch - I'll have a lean cuisine, or make a light sandwitch, maybe a big salad with some chicken in it, can of soup..maybe some tuna...

Snack. - more veggies. for my snacks, i allow myself as much fruits/vegetables as i want

Dinner - i usually make a yummy dinner, i just lighten it up any way i can. I usually do something simple, like a light meat, veggies & a starch. Although, i don't always eat the starch....i make them for DH & DD. Last night, we had turkey sausage & pasta with light alfredo & broccoli. It was yummy & not too expensive.

Tonight, we're having beef taco's. I put a very lean roast in the crock pot, poured taco seasoning & water to cover the roast & cook it on 200 until dinner time. very tastey & low fat. just add your fav. taco toppings.

  • If you are able to take a day and pre make your snacks, I find that is the easiest. Cut up veggies and keep in fridge for either salads or snacking, or dinner preparation. Premake your celery and PB, you can make homemade granola bars and keep them in the counter cookie jar all week. Premade fruited plain yogurts are good for about 3 days. Premade cheese cubes and homemade hummus, you can make your own healthy fast food. Boiled and peeled eggs are super snacks that last for hours. Homemade whole wheat waffles, spread some PB on them and you can carry them anywhere and you can freeze them for months.

  • I keep cubed frozen chicken breast (small servings) in the freezer and cook it in a skillet (garlic salt and onions) or bake it with a sauce and add steamed veggies. Exciting no, healthful yes (if you don't go crazy with the sauce), easy yes.

  • I also like to make a homemade soup once a week for a quick heat and eat for lunch. Today i'm making Minestrone soup.

For breakfast, they take about a half hour baking time but I love making "egg muffins" use egg beaters or a combo of 1-2 eggs with 1-2 egg whites and add veggies a little bit of cheese and even a slice of bacon crumbled to a muffin pan and then cover with the egg and bake. These bites are also portable and very low in calorie.

  • At wal-mart they have friut and like dip together in the same package, like carmel for apples or yogurt....and they have fruit packs with apples and grapes together. Me and my family get these all the time. I think they are called apple dippers.
