  • Crock pot Salsa Chicken
    4 to 6 chicken breasts
    32 oz. salsa (2 16 oz. jars)
1 15 oz. can corn, drained
1 16 oz. can black beans, drained and rinsed
Lay chicken pieces in bottom of crock pot. Top with rest of ingredients. Cover and cook on low for 6 to 8 hours until chicken is done. Serve with rice, or with flour tortillas, sour cream, black olives, tortilla chips, etc.

  • My favorite two things to do are sandwiches, I prefer pork roast for both, but beef roast is great as well.

French dip- 1 pork roast, a can of beef broth, (also a bottle of beer if you like...I prefer a dark beer...a dry white wine is good too) some sliced onions, minced garlic and pepper. Cook all day in your slow cooker and serve on french rolls with the juice on the side for dipping.

BBQ Pork Sandwiches- 1 pork roast, 1onion sliced (optional) 1 bottle of your favorite BBQ sauce (mine is Bulls Eye) cook all day and serve on buns.

  • Chicken Tortilla Soup

2 chicken breasts, 1 jar diced tomatoes (I puree them), 1 jar favorite salsa, 1 tbsp. tomato paste, corn, zucchini, yellow squash, diced chiles, 1 tbsp. taco seasoning, 2 tsp. cumin, 4 c. chicken stock, 2 jars black beans (or kidney or pinto), salt and pepper, a dash or two of cayenne. Stick all in crockpot for 6 hours. Add fresh chopped cilantro and a squeeze of fresh lime juice. Serve with grated cheese and tortilla chips.

  • Here's a simple one that can be changed to make it the way you like it. I add fresh potatoes, peas, corn, or canned if I don't have frozen on hand, and add leftover vegetables near the end of the cooking time, just to heat them. I also add other seasonings like Italian seasonings or cumin & chili powder.
    Hamburger Soup
    1 lb. hamburger
    3 cups water
    3 carrots, sliced
    2 beef bouillon cubes
    2 onions, chopped
1 (10 oz.) pkg. mixed frozen vegetables
1 1/2 cups tomatoes, canned or fresh
1/2 teaspoon each salt & pepper, or to taste
Brown hamburger, add remaining ingredients in crock pot and cook on low all day.

  • Crock Pot Beef Stew
2 lbs. of Beef cut into cubes.
1 lb. of Chopped Carrots (Cut into large pieces)
1 lb. of Potatoes (Peeled and cut into large pieces)
1 Large Onion (Peeled and cut into large pieces)
1 to 2 Tablespoons Beef Base or bouillon (I use a soup base that I get from Publix called “Better than Bouillon”.)

Place all of the beef, onions, carrots, potatoes, and any other vegetables that you may want to add (Like mushrooms, peas, or celery. It all depends on what you like.).
Cover with water and add about half a Tablespoon of the Beef Base.
Cook in the crock pot on low for about 8 to 10 hours while you are at work.
When you get home from work, your house will smell like beef stew. That’s how you know its ready.
You can add more of the Beef Base if you wish, and season to taste.
Thicken the stew with cornstarch mixed with water (remember, a little goes a long way).
