Anyone have some chicken recipes?

Looking for different things to do with chicken dinners. Getting bored of just chicken and pasta/rice.

  • I fried up some chicken, cubed it actually. I added crasisins (you could do raisins too), onion, celery, salt and pepper and garlic powder, pecans. Fried it in veg oil. You can eat it that way, or cook up some stuffing. Then put the chicken mix on the bottom of a greased pan, put the stuffing over that, and pour some gravy on it. Then bake it a half hour of 45 minutes so it all bakes together. I also made mashed potatoes with it. It was yummy.

    Chicken Divan

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    3 pounds cooked chicken
    16 ounces frozen broccoli
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1/2 cup sour cream
    1 cup grated cheddar cheese
    2 slices bread -- buttered and broiled lightly brown

    Preheat oven to 350 degrees. Bone chicken and arrange meat in a 9 x 13 pan. Arrange Broccoli on top Mix xoups and sour cream and spread over chicken and broccoli. Break bread up into pieces and arrange across the top of casserole, sprinkle with cheese and Bake 35 - 45 minutes.

  • Chicken Parmesan

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 pound skinless boneless chicken breast -- thinly pounded, cut into 4 pieces
    2 large egg whites -- lightly beaten
    1/2 cup bread crumbs, seasoned
    1 Tablespoon italian seasoning
    1 teaspoon olive oil
    1 1/2 cups tomato sauce
    1/2 cup part skim milk mozzarella cheese -- shredded
    1 Tablespoon parmesan cheese

    Preheat oven to 350 degrees. Coat an 8" square pan with cooking spray

    3. Heat oil in a large skillet; add chicken. Cook until lightly browned and no longer pink in center. About 4 minutes per side; place on paper towels to drain.


    4. Pour 1/2 cup of sauce into prepared baking dish; place chicken in dish and pour remaining sauce evenly over chicken. Sprinkle with cheeses and bake until bubbly about 25 minutes.

    I prefer to use my homemade pizza sauce over the tomato sauce, or any bottled spaghetti sauce would work. This is actually a Weight Watcher's recipe that I lvoe.

  • i made up this chicken casserole and my whole family loves it, it's one of our favs.
    you need:
    shredded cheddar cheese
    1 jar spaghetti sauce
    cook some chicken breasts, then shred them
    cook about 1 1/2 cups rice (i use white rice)
    layer in a 13x9 baking dish in this order:
    1.cooked rice
    2.spaghetti sauce (i only use about 1/2 the jar, but you can put as much sauce as you like)
    3.cooked chicken
    4.shredded cheese
    then i bake it uncovered at 305* for 10-15 minutes

    it's quick, easy, and tastes great!

  • I have chicken over rice- 1 cup rice, 1 can cream of mushroom, 1 can cream of celery, 1 can cream of chicken soups, 1/4 cup butter or olive oil, 1/4 cup milk, 1/4 cup french dressing. Mix all that together... pour 1/3 in 9 x 13 pan, lay out the chicken breasts, and then cover with additional rice mixture. Sprinkle with Parmesan Cheese and bake 1 hr at 350.

    Or, mix up some french onion soup, lay out the chicken breasts in a dish and cover with french onion soup.
