My favorite is super easy and yummy: get 1 can chili (any variety), 1 packet cream cheese, 1 can green chilis, bag of shredded cheese.
Take your 8x8 baking pan and spread the cream cheese at the bottom, pour and spread can of chili, pour and spread can of green chilies, sprinkle shredded cheese (taco/Mexican/etc ... blend) and bake at ~350F for ~20 minutes. It's done when it's all melty and the edges are slightly brown. Serve with your favorite tortilla chips.
Sometimes, I'll put sliced olives on top, depends on my mood.
Every time I take this somewhere, it is GONE! Make another pan if you want leftovers, it reheats well;)
