  • Pumpkin Roll, which in my house, causes more bloodshed than any pumpkin pie every would. (or pumpkin bread, cake, muffins - pretty much anything you can do with carrots, you can do with canned pumpkin)

  • I only make bread or muffins with it - go to, look up "apple pumpkin muffins" (which I've even made as a cake before, and also re-made the recipe to be gluten/sugar free), and pumpkin banana bread (you'll know it's the right one if it has a cup of honey in it). Both are soooooo yummy, and my kids devour them.

    A non-baked option - pumpkin applesauce. Mix pumpkin into unsweetened applesauce, add cinnamon, pumpkin pie spice, little brown sugar, stir it up and yummmmmmmm.

    Pumpkin Chess Bars
    18 1/4 ounce package yellow cake mix
    1 egg
    1/2 cup butter, melted
    15 oz. can of pumpkin
    8 ounce package cream cheese, softened
    3 eggs
    1 teaspoon vanilla extract
    1/2 cup butter, melted
    16 ounce confectioners sugar
    1 teaspoon nutmeg
    1 teaspoon cinnamon

    Preheat the oven to 350 degrees. Make the crust first by combining the cake mix, 1 egg and ½ cup melted butter and mixing well. Pat the cake mixture into a lightly greased 9x12" cake pan. Set aside. In a large bowl, beat the cream cheese and pumpkin together until smooth. Next, add the eggs, vanilla, and butter, and mix till incorporated.
    Add the powdered sugar, nutmeg and cinnamon and mix well. Spread the pumpkin mixture over the crust.
    Bake for 40-50 minutes, making sure not to over bake as the center should be a little jiggly.
    This is great served with whipped cream.
