  • Borracho beans
    1lb. pintos---soak overnight
    Cook beans in Chicken Broth--usually takes 6 cans--
    1lb. of Jimmy Dean roll sausage (hot)
    1 large yellow onion diced
    Brown sausage & onion--Pour off grease--
    I bunch Cilantro chopped
    1 Can Roi Tel tomatoes
    4 TBL chopped garlic--I have convinced him it's the same as fresh--It's not, but OK--
    Salt & Pepper-He uses a mix of black & red pepper--
    Bring to a boil & simmer--
    They should be soupy--

  • this doesnt really fit into your category, but i will explain what i made the other night:

    smoked sausage with red beans and rice.

    just took some leftover white rice i had in the fridge, mixed it in a big pot with a can of red beans, a can of rotel (basically diced tomatoes & green chile), and some seasonings. then i boiled smoked sausage, cut it up and added it to the mix. it was delicious! there were no leftovers :) and i added shredded cheese on top.
