Any one know how to make shrimp and rice gumbo?

With not a lot lot of ingredients. All the recipes i find online have a million ingredients and half of them i don't know what they are.

    I get the Zatarain's gumbo mix and add shrimp and frozen stir-fry veggies.

  • If you don't want to use a lot of ingredients, then you'll need to go with Zatarain's or something like that....Gumbo is just that way :) It isn't that hard though. Basically, you make a roux with oil and flour. If you're not practiced with roux, then bake it instead of doing it on the stove...less likely to burn. It takes about 90 min in a 350*f oven, and you'll need to stir it every so often. While it's in the oven, you peel and take the heads off the shrimp. Chill the shrimp and use the shells & heads to make broth. (or use peeled raw shrimp and chicken stock). Chop up onions, celery and green peppers..what the Cajuns call the Trinity. When the roux is the color of peanut butter or just a shade darker, add the Trinity to the pan and set it on the stove over med heat. (cont)

    Cook, stirring, until the veggies are tender and onions translucent. Add 1 tomato (peeled, deseeded, and chopped), along with a couple cloves of chopped garlic, 1/4 tsp of cayenne, salt & pepper. Then slowly add the shrimp or chicken broth. Simmer about 35-40 min. While it simmers, cut up some andouille sausage (or kielbasa if you can't find it or don't want it too spicy), and fry it off in a pan until the edges are a little crisp. Add the sausage and the shrimp to the gumbo, and while stirring constantly, add 1 tbsp of file powder. Remove from the heat, cover, and let sit 10-15 mn to cook the shrimp. Serve over rice.
