  • This lentil soup is a HUGE hit in my house! I serve it with homemade whole grain bread.

    Ingredients
    1 onion, chopped
    1/4 cup olive oil
    3 carrots, diced
    3 stalks celery, chopped
    10 cloves garlic, minced
    2 teaspoons dried oregano
    1 bay leaf
    2 teaspoons dried basil
    1 (14.5 ounce) can crushed tomatoes (I puree them too)
    2 cups dry lentils (I use a variety)
    8 cups chicken broth
    2 cups spinach, rinsed and thinly sliced
    salt to taste
    ground black pepper to taste
    Directions
    1.In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes. Place in crock pot.
    2.Stir in lentils, and add water and tomatoes. Cook on low 8 hours.

    Drizzle with Balsamic vinegar to serve.

  • easy roast
    This is a quick and tasty way to make roast!

    3-4 lb beef roast
    1 pkg dry onion soup mix
    1 can stewed tomatoes

    place roast into slow cooker cover with onion soup and tomatoes. cover and cook on low 8 hrs
