Making meals do double duty...

I hate leftovers. Some of the things I make:

Pork roast then bbq pork sandwiches
Roast chicken then chicken and dumplings
Italian beef sandwiches then beef and noodles
meatball subs then spaghetti

You get it, I'm sure...Well, I'm a bit tired of the same old same old...
Anyone got any new ideas?

    smash the meatballs and use them for lasagna

  • When we have left over steak I use it the next day to make steak and eggs as breakfast for dinner.
    I also freeze stuff a lot, like I make a double batch of spaghetti sauce and then freeze enough to have for another dinner when I'm not sick of it from just eating it, or I make two meatloafs and freeze one.

    Leftover chili I will take and put over a baked potato and then top with cheese- kind of like chili cheese fries. Or I will make a big pot of taco mix- meat, peppers, onion, corn, spinach, seasonings, and then make tacos one night, nachos another, and then use the rest to make an enchilada casserole or something like that.

  • We use leftover roast chicken for enchiladas often. You can also shred the chicken, stir-fry it with some hoisin sauce and pre-shredded coleslaw, and then wrap it up in a tortilla for homemade mu shu chicken!
