  • Basic potatoe salad is boiled potatoes, mayonnaise, salt and pepper, hard boiled eggs.
So much more can be added:
bacon, cucumbers, tomatoes, pickles, peas, carrots, mustard, ..........
    experiment.

  • I can't stand "crunchies" like peppers, carrots or cucumbers in potato salad, ICK.

Everyone who has ever had my moms potato salad says it's the best ever, that's because of one "secret" ingredient her mom used to do.

You need to put 6-8 large potatoes in the microwave until they are firm but soft (almost a baked potato but a little firmer)
    1 finely diced medium onion
    3-5 hard boiled eggs
Mayo - enough to coat everything
    1 teaspoon of sugar
and the "secret ingredient" - 1 tablespoon white vinegar

  • I boil my potatoes and let them cool off a bit then cut them up. I add mayo, sweet pickle relish, mustard, onions, hard boiled eggs (cut up) and season it with salt & pepper. I used to use celery but I can't eat that anymore.

  • Same as mom2jack04 but, I use dill pickle juice instead of, vinegar bc, it has extra spices in it. Oh, and don't forget celery seeds.
