What should I make for breakfast?

I make breakfast every Saturday (usually eggs on toast) for my roommate and I - it's the only morning we're both home and it's become kind of a tradition. He's got Monday off, since it's a holiday here, so I was thinking of making breakfast that day too... only NOT eggs on toast. Something different! I was thinking maybe french toast, but then again, maybe not. I want to change it up a bit!
Any suggestions?

  • Vanilla and Brown Sugar French Toast.... Mix your eggs, add brown sugar instead of white, and add some vanilla on top of that, beat until well mixed then add your milk (evaporated milk tastes the best). Tomorrow I'm doing biscuits and sausage gravy. Monday will be shaped pancakes.

  • Have you ever tried baked oatmeal before? it's really good. I don't have the recipe in front of me, but I'm pretty sure if you did a google search you could find it. I also like to switch things up a bit. I make frittatas, (don't think I spelled that right), breakfast pizza, and muffins. Good luck.

  • A quick quiche or egg or hashbrown casserole sounds delish... or pancakes with a fruit compote would be quick and easy and wonderfully yummy!

  • We love homemade pancakes. My favorite are banana pecan pancakes with chocolate gravy - they are sooo good!
