I am looking for a good macaroni salad recipe

  • I like vinegar based macaroni salad.

    In mine i put;

    cherry tomatoes cut in 1/2
    small pepperoni or large ones cut in 1/2
    chopped fresh basil
    chopped black olives
    fresh mozzarella pearls cut in 1/2
    cooked macaroni
    finely chopped garlic & onion
    red wine vinegar
    balsamic vinegar
    olive oil
    salt & pepper of my DH's favorites. I will add stuff all the time, that is my basic recipe. Sometimes i add bell peppers, or cooled italian sausage.

  • i love love love ranch pasta salad. it's broccoli florets, cut up carrots, diced cheese, cooked pasta, black olives, ranch dressing and mayo.

  • This was on a box of diced mixed veggies I bought at Costco (green beans, carrots and corn. I bought the veggies to throw in soups and stews, but could not resist this recipe:

    1 cup uncooked spiral or bow pasta
    1 12oz bag Bybee Foods Organic Garden Trio
    4 diced Roma tomatoes (I used halved grape tomatoes, because that's what I had)
    1/2 cup finely chopped scallions (I use used a sweet onion)
    1/2 cups feta cheese, crumbled

    2 Tbl chopped red onion (again, I used a sweet onion)
    2 cloved finely chopped garlic
    4 Tbl olive oil
    1 Tlb white vinegar
    2 Tbl water
    1 Tbl finely chopped thyme
    1 Tbl finely chopped basil
    (instead of the two above, I used 2 Tbl herbs d'Provence)
    fresh ground pepper to taste

    Cook pasta, drain and rinse with cold water. Cook Garden Trio vegetables as directed (I used a covered glass dish in the microwave) and cool.

  • either or, i like both, but sometimes i find one online and it taste like crap. haha! but i like them both. Maybe creamy because all i have is Mayo and our roads are ice so i have to use what i have here.

  • I don't make a good creamy one for some reason, i usually buy my creamy macaroni at the Next time i make it, I will throw in a tad of vinegar in with the mayo. I think that might help give it more zing.

  • I wing it. If I were going to make some today, using what I have in the house: cook the macaroni and drain, rinse in cold water. Chop fresh veggies (in my case, broccoli, celery, carrots, onion) and add. Mix some dry ranch mix into Miracle Whip (or mayo since that's all you have) and mix it all together.

    If I had it I'd maybe cube up some cheese and add that, some bell pepper...I jsut toss in veggies, lol!

  • Combine ingredients for dressing, whisking in olive oil last. Combine ingrediets, toss with dressing, sprinkle with scallions and feta.
