What foods do you find perfect for using the leftovers or making extra of part of the ingredients to use 2 nights in a row?

Sloppy joes and spaghetti can use either way.

Smoked sausage thrown into spaghetti for another meal.

Veggies clustered up from a couple nights for shepherds pie.

Mashed potatoes for above meal.

Would love more ideas!

  • We went out to dinner and splurged on steaks, had just a tiny bit of left over meat, so tonight is Beef Fried Rice night! Lots of Sunday meals are big ones so DH can use the leftovers for lunches, Ham/chicken for salads, beef sliced for sandwiches, meatloaf sandwiches. Pork roast  goes into BBQ, fried rice, open face sandwich (mashed potatoes and gravy). Steak or chicken becomes stir-fry, tacos, frittatas. Add meats to Pizzas (we only by frozen cheese) to make your own deluxe. My MIL is queen of chow-mien, she put just about any leftover into it.

  • I'm always boiling down that roasting chicken for chicken noodle soup and any veggies I have on hand that may in fact be leftovers.

  • Steak & potatoes - breakfast hash. Slice the steak, chop the potatoes, heat in a frying pan, add eggs & scramble. Can serve as is or wrapped in a tortilla with salsa.

    Any kind of roast or chicken - sandwiches. Shred the leftover meat, pull out chunks of fat/skin, add bbq sauce, heat and serve on buns with a salad.

    Any veggies/meats/almost any potatoes - soups.

    Steamed rice - rice pudding.

    Breads - bread pudding or baked french toast.
