What's ONE of your favorite health or shortcut tricks in the kitchen?

I bake mini meatballs in a mini muffin tin! Then I can use what I want or throw a bunch in the freezer for later. It's healthy because they aren't fried, and it's a shortcut because I don't have to stand over a frying pan for however long.
