If you go on a cruise, do your research first. Disney cruises have a nursery for children ages 3 and under. Most cruise lines do not offer childcare until they are age 3 and potty trained (must be both).
If your main reason for a vacation is for the adults, then you can go just about anywhere with the baby at this age (provided you are looking for childcare while there). If you go to a place like Las Vegas, make sure you ask if children are permitted. Some of the hotels are adults only. There are also hotels in Vegas that welcome children, but don't allow strollers.
If your main reason is for your 1 year old, the I would highly recommend a Disney resort. They have the typical Disneyland and Disney World, but they also have resorts in Hawaii, North Carolina, Vero Beach (FL east coast), Paris, Tokyo, etc. I wouldn't recommend flying more than 3 hours at a time though.
