Here is another. Mix parmesan cheese and plain bread crumbs ( 1/2&1/2) .. coat chicken.. saute in a couple of tablespoons olive oil.. when finished with cooking chicken add 1 more Tbsp olive oil to pan, deglaze the pan with 1/4 cup white wine and 2 Tablespoon fresh lemon juice.. ( double if more then 1 1/2 lb chicken) Let wine and lemon cook on high for about a minute, you'll see it turn a golden color.. then drizzle over chicken. I make this over rice or buttery egg noodles. Real simple with great flavor.
