What's the trick to making double baked potatoes?? Everytime I make them, the shells fall apart!

  • Cook the potatoes "whole" first. When you half them a scoop out the center, make sure that you have a thick crust left . . . with a good amount of white. Lift out the inside portion very gently with a spoon. I like to use HUGE potatoes because that gives me more stuff to work with.

  • bake the potatoes, i personally just put them in the microwave til they are fork tender. cut them in half and take a spoon removing the potatoe you do want to leave some so the skins dont tear.
