How do you sweeten pancakes without making them fall apart?

So I use an instant just add water mix and I was trying to make griddle cake type pancakes. I added less water and some syrup to the mix and it looked ok UNTIL I tried to cook them lol. When I went to flip them, they fell apart :( Any suggestions?

  • I use Bisquick, dash of lemon juice, sugar, vanilla and baking powder. And of course syrup on top. Its the melt in your mouth recipe on the box.

  • Don't use the mix. Find a recipe for griddle cakes and use that.

  • I quit buying the mix when I found a tiny black bug in my box. It is so easy to make it from scratch. I found a recipe on allrecipes.com and thats what I use now. Perfectr every time. Plus an electric griddle is the only way my pancakes will turn out.

  • I like adding pumpkin puree, or applesauce to my pancake mix, or using juice instead of water. If you just want sweet, you can try dusting them with powdered sugar or vanilla powder as soon as you take them off the griddle.

  • I have issues with adding sugar in any pancake mix. I think it might be altitude for me. What is your altitude?
