I want to do something diferent with my breast!

chicken breast I mean! All I ever do is grilled, chicken nuggets or stir fry. I need a new fabulous idea. I have no canned soups but I have lots of veggies, flour, bread, rice, pasta, just about every spice you can imagine and black beans. Plus your typical staples for the most part. Any ideas?

  • Cook, then chop or shred. Mix with some salsa, taco seasoning, corn, and about a half-cup of Miracle Whip if you've got 1 lb of meat. Spread half the mixture in a baking pan, top with about 1/2 cup shredded cheese & 1/2-1 cup crushed tortilla chips, the other half of the meat, another 1/2-1 cup chips, and about 1 cup of shredded cheese. Bake til cheese is melted. Serve as-is or with taco toppings (my family likes shredded lettuce and sour cream, you can also use more salsa, olives, avocado, chopped fresh tomato, onion, salad dressing, etc). I like to mix black beans into the meat mixture too sometimes.
