  • I use this one I got off a website a long while ago. My dh and kids love it & its easy.

    16 ounces penne pasta
    1 pound lean ground beef
    1 clove garlic, minced
    1 (28-ounce) jar tomato-based pasta sauce
    6 ounces ricotta cheese
1/2 cup freshly grated Parmesan cheese
Prepare pasta according to package directions; drain.
    Preheat oven to 300°F (150°C).
In a large skillet brown ground beef with garlic until no longer pink, about 10 minutes; drain.
Add pasta sauce and ricotta cheese; stir to blend. Transfer to a large casserole dish. Stir in pasta.
Bake, covered, for 10 minutes. Uncover and sprinkle Parmesan cheese on top.
Bake another 5 minutes until golden and bubbly.

  • In a large pot, put 1 lb. of penne pasta in HOT water to soak. In large pot, add olive oil, diced onion and saute, Add cut up boneless chicken breast and chopped garlic (about 3 cloves). Stir so this mixture doesn't burn. Then add your favorite jar sauce. Simmer for about 15 minutes. Drain pasta, add to pot with 1 cup of water. Simmer about 15 more minutes adding a little more water if needed. When pasta is cooked serve with garlic bread and top with parmesan or mozzarella cheese.

  • I like mixing a cup of sour cream and thawed chopped spinach to any jarred marinara sauce. Sometimes I add cooked crumbled ground beef too.

  • I serve this it over broccoli (and I make double the sauce).
    Pasta with Finger-Licking Peanut Sauce
1/2 cup low or no sodium vegetable broth
1/4 cup chunky peanut butter (I use smooth)
    1/4 cup low-sodium soy sauce
    3 tablespoons brown sugar
    2 tablespoons rice vinegar
2 teaspoons grated peeled fresh ginger
2 teaspoons chile paste with garlic (add to taste, it is pretty spicey)
    4 garlic cloves, minced
8 ounces uncooked whole wheat angel hair
1 pound extra-firm tofu, drained and cubed (optional)
1 cup (2-inch) sliced green onions
    1 cup shredded carrot
Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (this can also be done in the microwave; use a tempered glass bowl, like pyrex, cook for 20 seconds, stir, repeat until smooth). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drai
