Pretzels are so underappreciated. Very few good recipes available. How can I make these at home??

  • This is my recipe...

    Pretzel Dough

    2 cups warm water
    1 tbs sugar
1 tbs yeast or one packet
    1 tbs salt
    5 cups of flour

Warm your mixing bowl for a couple of minutes with hot water. Empty bowl and add two cups of warm water. Stir in sugar and yeast. Let sit for five minutes to let the yeast proof. Add one cup of flour and salt, mix on medium high for 2 minutes. Turn mixer down to speed 2. Add 3 1/2 cups of flour. Let mix until dough pulls away from side of bowl. Feel the dough, you want a dough that is slightly tacky, but not sticky. Add flour 2tbs at a time until tacky.
Roll into a ball, place in lightly greased bowl and cover with a light hand towel, not terrycloth! Turn on oven to 450 for exactly one minute. Turn off oven and put the bowl of dough in the oven and shut the door. Let rest one hour.

  • Remove the dough from bowl and cut ball into 1 inch hunks. Roll each piece into a long skinny rope. Shape. If wrapping hotdogs or smokies, wrap each a few times and break off the rope. Make sure to seal the dough in place with a dot of water on the end.
Boil water in large pot add 2 tbs baking soda. Place pretzels in water for one minute. Remove and place on baking sheet lined with parchment paper. Sprinkle with kosher salt and bake 400 degrees for 10-13 minutes.
One batch of dough will make 3 packages of hot dogs or two packages of smokies.
