How much to subsitute?

I've run out of white sugar and need to make a cake for a gathering. I have 8 cups of powdered (confectioner's) sugar. What is the conversion rate for a substitution?

  • Don't know if it is too late to help but from a website...........1 3/4 cup powdered sugar = 1 cup granulated sugar. I googled it and several websites said the same thing.

  • Actually, you can, but you'll need to alter your liquid measurements. Have any molasses, or fruit juice concentrate? You can use 3/4c fjc for a c of sugar. Be warned, any sub will alter the taste, change or darken the color. If you have time, run to the store. If you can halve the recipe to accommodate a full recipe, but less cake, that's an option, too. Serve smaller pieces with fruit, maybe?
