Do I add more water to cover, (again?)

Here's my Corned Beef & Cabbage recipe.
http://allrecipes.com/Recipe/Corned-Beef-and-Cabbage-I/Detail.aspx
I've been simmering the meat, & I just added the potatoes & carrots, but the water doesn't cover them... will they cook in time?? Should I add more water?

  • I always covered it with water because it cooks down anyway! Hope it was yummy!

  • I would cook the potatoes and cabbage together in a pot on the stove and then put them in there, the pototoes will take awhile in the crock pot.

  • I would make sure that at least 75% of each of the veggies were in water, so add more if needed
