I made a dinner with ricotta cheese. I have so much left over. Any suggestions on how to use it with common items I may have at home.

I don't want it to go to waste. Maybe something I can make for lunch?!

  • How much are you talking about? There are recipes for things like gnocchi or ricotta pie.

  • I just mix in some parsley, pepper and garlic and use it on pita chips.

    You can also just use it to top things like spaghetti or garlic toast...

    MMM.... Now I'm hungry!

  • Make some home made ravioli's. The dough is easy to make then just use ricotta for fill.

  • Make some fettucini noodles (or any kind you have), drain. Add butter and the ricotta cheese and mix.

    Also, add to spaghetti sauce.

    I just eat it plain.

    Chop up some frozen spinach add to the ricotta cheese, add some chopped garlic, salt and pepper, roll into al dente lasagna noodles. Put in a baking dish, top with spaghetti sauce and bake until noodles are done. About 30 minutes at 350.

  • It's delicious in scrambled eggs! Just whisk it into the eggs before you cook them. Really, really yummy! You can also make a spread/ for veggies by adding some seasonings that you like. Fresh basil is really good chopped up in it. I'm getting hungry thinking about it!
