Anyone ever make Potato pancakes?

how do you do it?
I grate the potatoes and onion and put flour, milk, eggs, and salt and pepper, but i heard some people use mashed Potatoes,

  • I don't make them only because they don't turn out right for me, but my Mom can make some pretty good ones. Mom uses whole potatoes, not mashed. She grates them real fine.

  • I haven't made them but I remember seeing Ina Garten making some and she grated a load of potatoes (2lbs) then put them in a tea towel and squeezed all the moisture out of them before adding 2eggs, 6tbsp flour, salt and pepper. (I jotted it down somewhere :) )

  • make sure you dry the potatos on a towel,you dont want the excess water.

  • my uncle use to make them for my grandfather and he just added left over mashed potatoes to the mixture to make them.

  • We have made them both ways and I really like the shredded potoato version much better. They are the best with bacon, cheese and green onions on top with a little sour cream to dip them in. Mmmm

  • My mom always used leftover mashed potatoes. She just made them into patties and put them in a frying pan with oil and cooked them until they were crispy.
