What are some of your favorite warmer-weather dinners?

I just don't want to cook a lot when the weather warms up, but we don't have gas in the grill right now so I'm looking for indoor warm weather dinners.

  • Salad with a can of tuna and a lil sharp chedder cheese. Use a strong dressing like ceaser and it won't be fishy, and it is part of a very effective wieght loss regimen.

  • Pasta salad! I used tri-colored rotini, basil pesto sauce, chopped cucumber, tomato, green, red, and yellow peppers (put whatever kind of raw veggies you like, be creative!), the McCormick salad toppings (you can find it where croutons are in the grocery store, it has sunflower seeds, spices, bacon bits, all kinds of stuff, adds a good crunch), add some basil, parmesan cheese...serve cold. My 3 year old loves it and so do my friends and family!

  • I like salads or cold soups. Look up a good recipe for gazpacho if you like tomatoes! Cold melon soup is great, too. You can find all sorts of good recipes at Sometimes I even just have a big bowl of ice cold fruit like melons, berries, grapes, apples, etc. Frozen watermelon is awesome as a dessert too, just cut it into 1" cubes and spread on a cookie sheet an freeze, then store the cubes in a ziploc baggie.

  • I love fresh spinach. Make a salad with spinach, stir-fry some chicken (or beef) with your favorite seasonings (mine is Creole) and add to the spinach salad. You can have deviled eggs, pasta salad, potato salad. Just think "cool". Split tomatoes into 4ths. 6ths or 8ths, fill center with tuna salad. Cottage cheese with crushed pineapple for side dish. Celery sticks with peanut butter or cream cheese and chopped nut filling.

  • Salads (lettuce and pastas are a huge hit) Me and sandwiches are the best of friends so I do buy lunch meat like it's going out of style and sometimes I mix the meats.

  • I love strawberry salad with pecans. I also just made an amazing dish.....Avocado, shrimp, tomato salad. Yum!! The recipe was on my meal planning website: Food on the Table. A friend referred me there a few months back and I've been making some great stuff. They pull sales from your local grocery store, create recipes and then send a grocery list to your iphone or email. FANTASTIC!!

    This avocado recipe is the favorite I've found. They also have a mandarin salad that is good and EASY.
