Do you eat the skins of potatoes?

They say that most of the vitamins we get from veggies are found in the skins. Do you eat the skins?

  • Depends on the type of potato and what I'm making :) Potato skins are yummy! :) But some varieties of potato have MUCH more tender to eat skins and are easier in some recipes :)

  • Depends on the variety and where they're from - any potato from the grocery store, no way. From my garden or the farmer's market - sometimes I do.
