Wow, good question!
How about this? It's a Venezuelan pot roast, very delicious. It goes well with simple roasted red potatoes or plain rice, and some kind of green vegetable, I have served roasted asparagus with it and gotten rave reviews. Plus, the whole thing is relatively simple and a lot of the work is done in advance.
