My kids are in High School, and something that we've done with them since they were in in Kindergarten and 1st grade is we did our own "fun day" on the last day of school (whether their school did something or not). We do what we call "backwards lunch" - the kids pick the restaurant (when they were little, it was places like Burger King, as they got older, their choices have "grown" with them).
We go and we do NOT get lunch, instead, we order the most decadent, outrageous, we've always wanted to try one dessert on the menu - each of us gets our own. Then, if we're still hungry (or needing something to cut the sugar), we order a small lunch to split (sort of how people usually do desserts :-) ) . We take that time to talk about what we're looking forward to in the summer, what the school year was like, what they think next yr will be like, etc.
