How do you tenderize steak for "Carne Guisada?"

What kind of meat do you select?
Should I beat it thin with the tenderizing club thing?
Sear then boil?
Marinade? I think this would mess the gravy up.

  • I think you will have to pick a skirt steak. I will boil it with salt, garlic and pepper. Until tender enough that you can pull it apart. Afterwards cook the sauce once ready put the meat in to warn up and enjoy!
